Enchilada Casserole

I made this last night and I thought it was really good. Chad gave it an 8 1/2. :)

1 1/2 lbs of ground beef
1 onion, chopped
1 can Ro-Tel tomatoes
1 1/2 to 2 sm. cans of enchilada sauce
1 can Mexicorn, drained
8 soft tortilla shells
shredded cheese

Brown ground beef and onions, drain. Mix Ro-Tel, enchilada sauce, and corn together, bring to a boil and simmer for 10 minutes. Layer 4 tortilla shells, then half the ground beef mixture, then pour half the sauce mixture over it. Sprinkle liberally with cheese. Repeat the process with the remaining ingredients. Bake at 350 for 20 minutes. Serves 4-6.

I'm so proud of you for cooking! Even though you had an "excuse". That sounds so good, only my picky family would not eat it. Jim is against corn or tomatoes (ro-tel) in food and Julianna won't eat casseroles. *sigh* I totally blame Jim.

I like the "sprinkle liberally" part about the cheese! I'll have to try this one very soon! I love Mexican food!
